One of my friend is a cook.
I admire her because she can make awesome food from almost nothing. And because she cooks so well, I love ordering food from her. And I also love testing her recipes.
Last week she came to me with a Yam Porridge to taste.
Yam porridge, never heard of it, but as a food lover, it was my pleasure to try it.
Trust me, that was YUMMY, delicious.
It is a Vegan meal, very easy to make.
She shared her recipe with me, and I am sharing it with you 😏
Ingredients:
Half a tuber of yam
250 grams spinach
2 vegetable stock cubes (Maggi, Knorr, etc)
2 table spoons of palm oil
1 1/2cups of water 1 onion
Method:
1. Peel the yam and cut into medium sized chunks. ( If you cut them too big, they wont cook all through, too small and they will become mashy)
2. Wash the spinach and chop it thinly.
3. Dice the onion.
4. In a pot, add the palm oil and heat.
→Then add the diced onions and cook until onions are translucent.
5. Add the two vegetable stock cubes and stir until well mixed with the oil and water. Now add the chunks of yam and stir until well mixed.
7. Pour in the one and a half cups of water.
8. Leave to cook for 10 min or until the water is almost finished.
9. Add the spinach and stir.
10. Cover the pot, Turn off the fire and leave for 5 min.
11. Your yam porridge is ready to serve.
